Peach Shortbread Recipe

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup peach preserves
  • 1/4 cup sliced almonds

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add vanilla extract and mix well.
  4. In a separate bowl, whisk together flour and salt.
  5. Add flour mixture to butter mixture and mix until a dough forms.
  6. Divide dough in half.
  7. Press one half of the dough into an 8-inch square baking dish.
  8. Spread peach preserves over the dough in the baking dish.
  9. Crumble remaining dough on top of the preserves.
  10. Sprinkle sliced almonds over the top of the crumbled dough.
  11. Bake in preheated oven for 25-30 minutes or until edges are just golden brown.
  12. Cool completely in the baking dish before cutting into squares.
