Ingredients:

  • 4-5 ripe peaches, peeled and sliced
  • 2 cups Lillet Blanc
  • 1 cup water
  • 1/2 cup sugar
  • 3 envelopes powdered gelatin

Instructions:

  1. In a small saucepan, heat the Lillet Blanc, water, and sugar over medium heat. Stir until the sugar has dissolved completely.
  2. Sprinkle in the gelatin and stir until completely dissolved.
  3. Remove the saucepan from the heat and let cool for 5-7 minutes.
  4. In a large bowl, place the peach slices in a single layer.
  5. Pour the Lillet mixture over the peaches, making sure that all of the peaches are completely covered.
  6. Refrigerate the mixture for at least 2-3 hours, or until completely set.
  7. Once the jelly is set, use a knife to loosen the edges and invert it onto a dish.
  8. Serve chilled and garnish with fresh mint, if desired.

Verdict:

This recipe is a delicious and elegant way to show off ripe summer peaches. The Lillet Blanc adds a subtle and sophisticated flavor to the dish, while the jelly makes it a refreshing and light dessert. It’s perfect for a dinner party or a special occasion.

Serving Suggestions:

Peaches in Lillet jelly can be served alone or with a dollop of whipped cream. To make it more indulgent, add a scoop of vanilla ice cream or serve with a slice of pound cake. It’s also a great accompaniment to a cheeseboard, especially if you’re serving blue or aged cheeses.
