Peanut Butter Cookies: Gluten-Free Recipe

Ingredients

  • 1 cup creamy peanut butter (unsweetened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup gluten-free all-purpose flour

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Using an electric mixer, beat the peanut butter, granulated sugar, and brown sugar together until well combined and creamy.
  3. Add the egg and vanilla extract, and continue to beat until smooth.
  4. In a small bowl, whisk together the baking soda, salt, and gluten-free all-purpose flour.
  5. Add the dry ingredients to the peanut butter mixture and beat until just combined.
  6. Using a cookie scoop or a spoon, form tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten the balls with a fork, making a criss-cross pattern on the top.
  7. Bake for 10-12 minutes, or until the edges are lightly browned and the cookies are set.
  8. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
