Pear, Hazelnut and Pistachio Tart with French Toast

Ingredients:

  • 1 sheet of ready-to-roll puff pastry
  • 3 ripe pears, peeled and sliced
  • 1/2 cup of hazelnuts, roughly chopped
  • 1/2 cup of pistachios, roughly chopped
  • 1/4 cup of honey
  • 1/4 cup of brown sugar
  • 1/2 tsp of cinnamon
  • 1/2 tsp of vanilla extract
  • 1/4 tsp of salt
  • 4 slices of bread
  • 2 eggs
  • 1/4 cup of milk
  • 1 tbsp of butter

Instructions:

  1. Preheat the oven to 190°C.
  2. Place the puff pastry onto a baking sheet lined with parchment paper and fold the edges up to create a border.
  3. Arrange the sliced pears onto the pastry, leaving a small gap between each slice.
  4. Mix together the hazelnuts, pistachios, honey, brown sugar, cinnamon, vanilla extract and salt in a small bowl.
  5. Spoon the mixture over the pears, covering them evenly.
  6. Bake the tart for 25-30 minutes or until the pastry is golden brown and the pears are cooked through.
  7. While the tart is baking, make the French toast. Beat together the eggs and milk in a shallow dish.
  8. Dip each side of the bread slices into the egg mixture to coat evenly.
  9. Melt the butter in a non-stick pan over medium heat.
