Pears and Apricot Coulis

Ingredients:

  • 4 medium-sized ripe pears
  • 8 apricots
  • 2 tablespoons granulated sugar
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Peel the pears and cut into quarters. Remove the core and seeds from the pears.
  2. Wash and halve the apricots. Remove the stone from the apricots.
  3. In a small saucepan, add the pears, apricots, sugar, and water. Cook on medium heat for 10-12 minutes or until the fruits are soft and tender.
  4. Remove from heat and let it cool down for a few minutes.
  5. Using a blender or food processor, blend the fruits and liquid until it forms a smooth puree.
  6. Strain the mixture through a fine-mesh strainer. You can use a spatula to press out all the liquid from the fruit.
  7. Pour the strained coulis back into the saucepan and add vanilla extract. Cook it for an additional 2-3 minutes on low heat until it thickens slightly.
