Pecan Ice Cream Cake Recipe

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups chopped pecans
  • 4 cups vanilla ice cream, slightly softened
  • 1 cup caramel sauce

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Combine the flour, baking powder, and salt in a medium bowl.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy, about 4 minutes.
  4. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
  5. Stir in the vanilla extract and the chopped pecans.
  6. Add the dry ingredients to the wet ingredients in three separate additions, mixing until just combined after each.
  7. Pour the batter into the prepared springform pan and smooth it out into an even layer.

  13. Place the top half of the cake over the ice cream and caramel mixture, pressing down lightly to adhere.
  14. Cover the cake with plastic wrap and freeze for at least 2 hours or until the ice cream is solid.
  15. Prior to serving, drizzle 1/2 cup of caramel sauce over the top of the ice cream cake.
