Pecan Tartlets Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 tablespoon ice water
  • 1/4 teaspoon salt
  • 1/2 cup corn syrup
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves

Instructions:

  1. Preheat oven to 375°F.
  2. In a large mixing bowl, combine flour, butter, sugar, egg yolk, ice water and salt. Mix until dough forms.
  3. Divide the dough into 24 portions, rolling each portion into a ball.
  4. Press each ball into the bottom and up the sides of a muffin tin.
  5. In a medium mixing bowl, mix together corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt until combined.
  6. Stir in pecans and mix well.
  7. Evenly distribute the pecan mixture into the muffin cups.
  8. Bake for 20-25 minutes, or until golden brown and set.
  9. Allow to cool for a few minutes before removing from the muffin tin.
  10. Serve warm or at room temperature.
