Pecan Tartlets Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup granulated sugar
- 1 egg yolk
- 1 tablespoon ice water
- 1/4 teaspoon salt
- 1/2 cup corn syrup
- 1/2 cup packed light brown sugar
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups pecan halves
Instructions:
- Preheat oven to 375°F.
- In a large mixing bowl, combine flour, butter, sugar, egg yolk, ice water and salt. Mix until dough forms.
- Divide the dough into 24 portions, rolling each portion into a ball.
- Press each ball into the bottom and up the sides of a muffin tin.
- In a medium mixing bowl, mix together corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt until combined.
- Stir in pecans and mix well.
- Evenly distribute the pecan mixture into the muffin cups.
- Bake for 20-25 minutes, or until golden brown and set.
- Allow to cool for a few minutes before removing from the muffin tin.
- Serve warm or at room temperature.
