Ingredients
- 2 boneless chicken breasts, thinly sliced
- 4 cups chicken broth
- 1 cup sliced mushrooms

- 1/2 cup firm tofu, diced
- 2 tbsp. soy sauce
- 2 tbsp. rice vinegar
- 1 tbsp. chili paste
- 1 tbsp. sesame oil
- 1/2 cup sliced scallions
- 2 garlic cloves, minced
- 1 tbsp. cornstarch
- 2 tbsp. water
Instructions
- In a large pot, bring the chicken broth to a boil. Add the chicken, mushrooms, bamboo shoots, tofu, soy sauce, rice vinegar, chili paste, sesame oil, scallions, and garlic. Reduce heat, cover, and simmer for 15 minutes.
- In a small mixing bowl, mix together the cornstarch and water until smooth. Pour into the soup and stir well to thicken.
