Pie: Family Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup vegetable shortening
  • 4-6 tablespoons ice water
  • 4 cups sliced fruit (apples, peaches, berries, etc)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon unsalted butter
  • 1 large egg, beaten

Instructions:

  1. In a large bowl, combine 2 cups flour and 1 teaspoon salt. Cut in 3/4 cup shortening until mixture resembles coarse crumbs. Gradually add 4-6 tablespoons ice water, tossing with a fork until the dough comes together.
  2. Divide dough in half, and shape each half into a ball. Flatten slightly, wrap in plastic wrap, and refrigerate for 1 hour.
  3. Preheat oven to 375°F (190°C).
  4. In a separate bowl, mix 4 cups fruit, 1/2 cup granulated sugar, 1/4 cup brown sugar, 2 tablespoons flour, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg.
  5. On a lightly floured surface, roll out one ball of dough into a 12-inch circle. Transfer to a 9-inch pie dish and trim the edges.
  6. Add the fruit filling to the crust. Cut 1 tablespoon of butter into small pieces and sprinkle over the filling.
  7. Roll out the second ball of dough and cut into strips. Arrange the strips in a lattice pattern over the top of the pie.
  8. Brush the top crust with beaten egg wash.
  9. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  10. Let cool before serving.
