Pineapple Tiramisu Recipe
Ingredients
- 1 whole pineapple, peeled and diced
- 1 cup heavy cream
- 1/2 cup sugar
- 1/4 cup rum
- 1/4 cup coconut milk
- 5 egg yolks
- 1/2 cup mascarpone cheese
- 1 package ladyfingers
- 1/4 cup toasted coconut flakes
Instructions
- In a medium-sized saucepan, combine the pineapple, sugar, and rum. Cook over medium heat until the pineapple has softened and the liquid has thickened, about 10-15 minutes. Remove from heat and let it cool to room temperature.
- In a large mixing bowl, beat the heavy cream to soft peaks. Set aside.
- In a separate mixing bowl, beat the egg yolks until pale yellow, then add the coconut milk and continue to beat until well combined.
- Add the mascarpone cheese to the egg yolk mixture and continue to beat until well combined and smooth.
- Fold in the whipped cream to the mascarpone mixture until it’s well combined and there are no lumps.
- Dip the ladyfingers in the pineapple-rum mixture and arrange them in a single layer in a 9×13 inch baking dish.
- Add a layer of the mascarpone mixture on top of the ladyfingers.
- Spread a layer of the cooked pineapple on top of the mascarpone mixture.
- Repeat the process of ladyfingers, mascarpone, and pineapple until the ingredients are used up. The top layer should be the mascarpone mixture.
- Sprinkle the toasted coconut flakes on top of the final layer of the mascarpone mixture.
- Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to set.
- Remove from the fridge and let it sit for about 10 minutes before serving.
