Pineapple Tiramisu Recipe

Ingredients

  • 1 whole pineapple, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup rum
  • 1/4 cup coconut milk
  • 5 egg yolks
  • 1/2 cup mascarpone cheese
  • 1 package ladyfingers
  • 1/4 cup toasted coconut flakes

Instructions

  1. In a medium-sized saucepan, combine the pineapple, sugar, and rum. Cook over medium heat until the pineapple has softened and the liquid has thickened, about 10-15 minutes. Remove from heat and let it cool to room temperature.
  2. In a large mixing bowl, beat the heavy cream to soft peaks. Set aside.
  3. In a separate mixing bowl, beat the egg yolks until pale yellow, then add the coconut milk and continue to beat until well combined.
  4. Add the mascarpone cheese to the egg yolk mixture and continue to beat until well combined and smooth.
  5. Fold in the whipped cream to the mascarpone mixture until it’s well combined and there are no lumps.
  6. Dip the ladyfingers in the pineapple-rum mixture and arrange them in a single layer in a 9×13 inch baking dish.
  7. Add a layer of the mascarpone mixture on top of the ladyfingers.
  8. Spread a layer of the cooked pineapple on top of the mascarpone mixture.
  9. Repeat the process of ladyfingers, mascarpone, and pineapple until the ingredients are used up. The top layer should be the mascarpone mixture.
  10. Sprinkle the toasted coconut flakes on top of the final layer of the mascarpone mixture.
  11. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to set.
  12. Remove from the fridge and let it sit for about 10 minutes before serving.
