Pistachio Flan with Plums Recipe
Ingredients
- 2 cups of heavy cream
- 1 cup of whole milk
- 1/2 cup of granulated sugar
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 6 large egg yolks
- 1/2 cup of unsalted pistachios, finely chopped
- 4 ripe plums, pitted and sliced
- 1/4 cup of honey
Instructions
- Preheat oven to 325°F (165°C).
- In a medium saucepan, combine heavy cream, whole milk, sugar, and salt. Cook over medium heat, stirring occasionally, until sugar is dissolved and mixture is hot, but not boiling.
- Remove from heat and stir in vanilla extract and chopped pistachios.
- In a separate bowl, whisk egg yolks together. Slowly add them to the cream mixture, whisking constantly.
- Strain mixture through a fine mesh strainer and divide it among six 4-ounce ramekins or custard cups.
- Place ramekins in a baking dish and pour enough hot water into the pan to reach halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the flans are set and a toothpick inserted in the center comes out clean.
- Remove from oven and let cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.
- While the flans are chilling, make the plum topping. In a small saucepan, combine sliced plums and honey. Cook over medium heat, stirring occasionally, until the plums are soft and caramelized, about 10-12 minutes.
- Serve the flans chilled, topped with the plum mixture.
