Pistachio Floating Islands: Original Bistro Recipe

Ingredients:

  • 4 egg whites
  • 1/2 cup sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 2 cups milk
  • 1/2 cup pistachios, finely chopped
  • 1/2 teaspoon almond extract
  • 1/4 cup honey

Directions:

  1. In a large bowl, beat egg whites with cream of tartar until soft peaks form.
  2. Gradually add sugar and vanilla extract and beat until stiff peaks form.

  9. Using a slotted spoon, remove floating islands from plate and place them into the warm milk mixture.
  10. Serve in individual bowls with a spoonful of the milk mixture on top of each island.
