Ingredients

Instructions

  1. Place the heavy cream, milk, and sugar in a medium-sized saucepan and stir to combine. Heat the mixture over medium heat, stirring occasionally until the sugar has dissolved and the mixture has just come to a boil.
  2. Remove the pan from the heat and stir in the chopped pistachios. Allow the mixture to infuse for at least 30 minutes. Strain the mixture through a fine-mesh sieve, pressing down on the solids to extract as much flavor as possible.
  3. Return the infused cream mixture to the saucepan and heat over medium heat until it reaches 170°F, stirring occasionally.
  4. Meanwhile, whisk the egg yolks in a medium-sized bowl until light and fluffy. Slowly pour half of the hot cream mixture into the egg yolks while whisking constantly.
  5. Return the egg yolk mixture to the saucepan and continue to cook over medium heat, stirring constantly, until the mixture reaches 175°F and thickens enough to coat the back of a spoon.
  6. Remove the saucepan from the heat and stir in the vanilla extract. Pour the mixture through a fine-mesh sieve into a large bowl, pressing down on the solids with a spatula to extract as much custard as possible.
  7. Cover the bowl with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Chill the mixture in the refrigerator for at least 4 hours or until completely cooled.
  8. Once cooled, transfer the custard to an ice cream maker and churn according to the manufacturer’s instructions. Transfer the finished ice cream to a container and freeze for at least 2 hours or until firm enough to scoop.
