Poached Eggs with Peasant Bacon, Tonka Bean Foam Recipe

Ingredients:

  • 4 large eggs
  • 4 slices of peasant bacon
  • 1 tonka bean
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. Fill a large saucepan 2/3 full with water, add salt and bring to a low simmer (not boiling).
  2. While the water is heating up, cut the peasant bacon into small pieces and crisp it up in a skillet over medium heat.
  3. Add the heavy cream to a small saucepan and heat over medium until hot but not boiling. Add the tonka bean and let steep for 10 minutes.
  4. Crack each egg into a small bowl, one at a time. Create a vortex in the poaching water by stirring it with a spoon. Gently pour each egg into the center of the vortex and let cook for 3-4 minutes.
  5. Remove the eggs with a slotted spoon and place on a paper towel to drain excess water.
  6. Remove the tonka bean from the heavy cream and transfer to a blender. Blend until frothy and season with salt and pepper to taste.
  7. Divide the bacon among four plates and top each with a poached egg. Pour the tonka bean foam over the eggs.
  8. Serve immediately and enjoy!
