Ingredients

  • 4 ripe pears
  • 1/2 lemon, juiced and zested
  • 3 cups of water
  • 1 cup of white wine
  • 1/2 cup of honey
  • 2 cinnamon sticks
  • 4 cloves

Instructions

  1. Peel the pears, leaving the stems intact. Cut off the bottom of the pear so it sits level.
  2. In a medium-sized pot, combine the water, white wine, honey, cinnamon sticks, cloves, lemon juice and zest. Stir well and bring to a boil.
  3. Once the liquid reaches boiling point, reduce heat to a low simmer and carefully place the pears into the poaching liquid so they are almost completely submerged. If needed, add a little extra water to cover the pears.
  4. Simmer the pears for 30-40 minutes, occasionally basting them with the poaching liquid. (Pro tip: Use a little extra honey and cinnamon to baste the pears for a little extra sweetness and flavor)
  5. Once the pears are tender and cooked through, carefully remove from the poaching liquid and let them cool before serving.
  6. Garnish the pears with a drizzle of poaching liquid and a sprig of mint or a dusting of cinnamon sugar for an extra touch.
