Polenta Blinis with Porcini Mushrooms Recipe

Ingredients:

  • 1 cup polenta (yellow cornmeal)
  • 4 cups water
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp olive oil, divided
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. porcini mushrooms, sliced
  • 1/4 cup dry white wine
  • 1 tbsp chopped fresh parsley

Instructions:

  1. In a large pot, bring the water to a boil. Add the salt and pepper.
  2. Gradually whisk in the polenta. Cook over medium heat, whisking constantly, for about 10-15 minutes or until the polenta is thick and creamy.
  3. Remove from heat and stir in the Parmesan cheese. Let the polenta cool for a few minutes.
  4. Using a small cookie scoop or spoon, drop the polenta onto a greased nonstick skillet. Cook for 2-3 minutes per side or until golden brown. Repeat until all polenta is used up.
  5. In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes or until the onion is soft and translucent.
  6. Add the sliced porcini mushrooms to the pan and sauté for about 5-7 minutes or until the mushrooms are tender and slightly browned. Pour in the wine and cook for another minute or two until the wine is absorbed.
  7. Stir in the chopped parsley and remaining tablespoon of olive oil. Serve over the polenta blinis.
