Polenta Medallions Recipe
Ingredients:
- 1 cup of polenta
- 4 cups of water or broth
- 1 teaspoon of salt
- 2 tablespoons of olive oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of dried thyme
Instructions:
- In a medium saucepan, bring the water or broth to a boil over high heat. Add the salt.
- Slowly pour the polenta into the boiling water while stirring constantly with a whisk.
- Reduce the heat to low and continue stirring the mixture occasionally for about 20 minutes until the polenta thickens and starts to pull away from the sides of the pan.
- Remove the pan from the heat and stir in the olive oil, garlic powder, and thyme.
- Preheat your oven to 375F and line a baking sheet with parchment paper.
- Spoon the polenta mixture onto the prepared baking sheet and use a spatula to flatten it into an even layer that’s about 1/2 inch thick.
- Allow the polenta to cool and set for about 15 minutes.
- Once cooled, cut the polenta into small circles using a cookie cutter or a knife.
- Heat a large skillet over medium-high heat and add a little bit of olive oil.
- Carefully transfer the polenta medallions to the skillet and cook for about 2-3 minutes on each side until they are golden brown and crispy.
- Remove from the skillet and place them on a paper towel-lined plate to absorb excess oil.
- Serve hot with your favorite toppings and sides.
