Polenta medallions

Polenta Medallions Recipe

Ingredients:

  • 1 cup of polenta
  • 4 cups of water or broth
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of dried thyme

Instructions:

  1. In a medium saucepan, bring the water or broth to a boil over high heat. Add the salt.
  2. Slowly pour the polenta into the boiling water while stirring constantly with a whisk.
  3. Reduce the heat to low and continue stirring the mixture occasionally for about 20 minutes until the polenta thickens and starts to pull away from the sides of the pan.
  4. Remove the pan from the heat and stir in the olive oil, garlic powder, and thyme.
  5. Preheat your oven to 375F and line a baking sheet with parchment paper.
  6. Spoon the polenta mixture onto the prepared baking sheet and use a spatula to flatten it into an even layer that’s about 1/2 inch thick.
  7. Allow the polenta to cool and set for about 15 minutes.
  8. Once cooled, cut the polenta into small circles using a cookie cutter or a knife.
  9. Heat a large skillet over medium-high heat and add a little bit of olive oil.
  10. Carefully transfer the polenta medallions to the skillet and cook for about 2-3 minutes on each side until they are golden brown and crispy.
  11. Remove from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  12. Serve hot with your favorite toppings and sides.

Polenta medallions are a delicious and versatile dish that can be served as a side dish or be the star of the show.
