Polenta Pancakes with Reblochon Cheese and Ham

A delicious savory pancake recipe that is perfect for breakfast or brunch!

Ingredients:

  • 1 cup instant polenta
  • 2 cups water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 4 slices of ham, cut into thick strips
  • 6 oz reblochon cheese, cut into small pieces
  • 2 tbsp olive oil

Instructions:

  1. In a medium sized saucepan, combine polenta, water, salt, and pepper. Bring to a boil and then reduce heat to low. Stir frequently until mixture becomes thick, approximately 5-7 minutes.
  2. Remove from heat and stir in parmesan cheese until well combined. Let cool for a few minutes.
  3. Heat olive oil in a large non-stick skillet over medium heat. Spoon the polenta mixture into the skillet, forming pancakes that are approximately 3 inches in diameter.
  4. Cook the pancakes for 3-4 minutes on each side or until golden brown. Make sure to leave enough space between them to prevent them from sticking together.
  5. Add a few slices of ham and some small pieces of reblochon cheese to each pancake. Fold the pancakes in half and continue to cook until the cheese is melted and the ham is heated through, approximately 1-2 minutes.
  6. Remove from heat and serve hot.
