Polenta with Porcini Mushrooms and Parma Ham Recipe

Ingredients

  • 1 cup polenta
  • 4 cups water
  • 1 teaspoon salt
  • 1 cup grated parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 1/4 cup chopped onion
  • 1 garlic clove, minced
  • 8 ounces fresh porcini mushrooms, sliced
  • 4 ounces Parma ham, cut into strips
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a medium saucepan, bring the water and salt to a boil. Gradually whisk in the polenta and reduce heat to low.
  2. Cook the polenta, stirring occasionally, for 30 minutes or until the mixture thickens and the grains are soft.
  3. Remove from heat and stir in the parmesan cheese and 2 tablespoons of the olive oil. Set aside and keep warm.
  4. In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
  5. Add the onion and garlic and cook for 2 minutes or until fragrant.
  6. Stir in the mushrooms and cook for 5-7 minutes or until they are tender and have released their juices.
  7. Remove from heat and stir in the Parma ham.
  8. To serve, spoon the polenta onto plates and top with the mushroom and ham mixture. Garnish with chopped parsley.
