Polenta with Porcini Mushrooms and Parma Ham Recipe
Ingredients
- 1 cup polenta
- 4 cups water
- 1 teaspoon salt
- 1 cup grated parmesan cheese
- 1/4 cup extra virgin olive oil
- 1/4 cup chopped onion
- 1 garlic clove, minced
- 8 ounces fresh porcini mushrooms, sliced
- 4 ounces Parma ham, cut into strips
- 1/4 cup chopped fresh parsley
Instructions
- In a medium saucepan, bring the water and salt to a boil. Gradually whisk in the polenta and reduce heat to low.
- Cook the polenta, stirring occasionally, for 30 minutes or until the mixture thickens and the grains are soft.
- Remove from heat and stir in the parmesan cheese and 2 tablespoons of the olive oil. Set aside and keep warm.
- In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
- Add the onion and garlic and cook for 2 minutes or until fragrant.
- Stir in the mushrooms and cook for 5-7 minutes or until they are tender and have released their juices.
- Remove from heat and stir in the Parma ham.
- To serve, spoon the polenta onto plates and top with the mushroom and ham mixture. Garnish with chopped parsley.
