Porcini Mushroom Risotto

Ingredients:

  • 6 cups chicken or vegetable broth
  • 1/2 cup dried porcini mushrooms
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Bring the broth to a simmer in a medium saucepan.
  2. Add the dried porcini mushrooms to the broth and stir to combine. Turn off the heat and allow the mushrooms to soak for 10 minutes.
  3. Remove the mushrooms from the broth with a slotted spoon and chop them finely. Reserve the broth for later.

  8. Add another cup of the reserved broth and continue stirring until it has been absorbed. Repeat this process, one cup at a time, until the rice is creamy and tender but still slightly firm in the center. This should take about 20-25 minutes.
  9. Add the chopped porcini mushrooms and Parmesan cheese to the saucepan and stir until the cheese has melted and the mushrooms are heated through. Season with salt and pepper to taste.
  10. Serve the risotto hot with additional grated Parmesan cheese on top, if desired.
