Potato and Onion Turnovers Recipe

Ingredients

  • 2 cups mashed potatoes
  • 1 large onion, diced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 sheets puff pastry, thawed
  • 1 egg, lightly beaten

Instructions

  1. Preheat oven to 400°F.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the onion and sauté until soft and lightly browned, about 8 minutes.
  4. Add the mashed potatoes, salt, black pepper, paprika, and cayenne pepper to the skillet. Stir to combine. Remove from heat.
  5. Roll out one sheet of puff pastry on a floured surface. Cut the pastry sheet into 9 equal squares.
  6. Place a spoonful of the potato and onion mixture on each square.
  7. Using a pastry brush, brush egg wash on the edges of the pastry squares.
  8. Fold the pastry squares over to form triangles. Press the edges together with a fork to seal.
  9. Place the turnovers on a baking sheet lined with parchment paper.
  10. Repeat with the second sheet of puff pastry and remaining potato mixture.
  11. Brush the tops of the turnovers with the egg wash.
  12. Bake for 15-20 minutes, or until golden brown.
