Potato Croquettes Recipe
Ingredients:
- 2 lbs. potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup minced onion
- 2 tbsp. minced fresh parsley
- 2 garlic cloves, minced
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 cup breadcrumbs
- 2 large eggs
- Vegetable oil, for frying
Directions:
- Peel and cut potatoes into small pieces. Boil in a pot of salted water until tender for about 15 minutes. Drain and mash them in a bowl.
- Add cheese, minced onion, minced parsley, minced garlic, salt, and black pepper to the bowl. Mix everything well until incorporated.
- Place 1 cup of breadcrumbs in a shallow bowl and place two beaten eggs in another shallow bowl.
- Shape potato mixture into small round balls or oblongs and roll them first in eggs, then coat them with breadcrumbs.
- In a frying pan, heat 1 inch of oil to 375°F. Place the croquettes in the oil and fry them until golden brown, approximately 2-3 minutes per side.
- Transfer the croquettes to a paper towel-lined plate to absorb any excess oil.
- Serve warm with your favorite dipping sauce or alongside salad.
