Potato Croquettes Recipe

Ingredients:

  • 2 lbs. potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup minced onion
  • 2 tbsp. minced fresh parsley
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 cup breadcrumbs
  • 2 large eggs
  • Vegetable oil, for frying

Directions:

  1. Peel and cut potatoes into small pieces. Boil in a pot of salted water until tender for about 15 minutes. Drain and mash them in a bowl.
  2. Add cheese, minced onion, minced parsley, minced garlic, salt, and black pepper to the bowl. Mix everything well until incorporated.
  3. Place 1 cup of breadcrumbs in a shallow bowl and place two beaten eggs in another shallow bowl.
  4. Shape potato mixture into small round balls or oblongs and roll them first in eggs, then coat them with breadcrumbs.
  5. In a frying pan, heat 1 inch of oil to 375°F. Place the croquettes in the oil and fry them until golden brown, approximately 2-3 minutes per side.
  6. Transfer the croquettes to a paper towel-lined plate to absorb any excess oil.
  7. Serve warm with your favorite dipping sauce or alongside salad.
