Potato stuffed with salmon: easy recipe (3 steps)

Potato Stuffed with Salmon Recipe

Ingredients

  • 4 large potatoes
  • 1 can of salmon
  • 4 tablespoons of butter
  • 1/4 cup of milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and scrub the potatoes. Then, pierce them with a fork a few times and place them on a baking sheet.
  3. Bake the potatoes for 45-60 minutes, or until they’re tender.
  4. While the potatoes are baking, drain the can of salmon and mix it with 3 tablespoons of butter. Add salt and pepper to taste.
  5. Once the potatoes are done, let them cool for a few minutes. Then, slice off the top third of each potato and scoop out the inside flesh, leaving about 1/4 inch of potato flesh around the edges.
  6. Mix the scooped-out potato flesh with the remaining tablespoon of butter and the milk until smooth and creamy. Season with salt and pepper to taste.
  7. Fill each potato skin with the salmon mixture, and then top it off with the creamy potato mixture.
  8. Place the stuffed potatoes back on the baking sheet and bake them for another 10-15 minutes, or until the tops are golden brown.

Serving Suggestions

Serve the stuffed potatoes hot, garnished with fresh herbs like chives or parsley. These potatoes are great as a main course or as a side dish to a hearty salad or roasted vegetables.
