Potato Stuffed with Salmon Recipe
Ingredients
- 4 large potatoes
- 1 can of salmon
- 4 tablespoons of butter
- 1/4 cup of milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and scrub the potatoes. Then, pierce them with a fork a few times and place them on a baking sheet.
- Bake the potatoes for 45-60 minutes, or until they’re tender.
- While the potatoes are baking, drain the can of salmon and mix it with 3 tablespoons of butter. Add salt and pepper to taste.
- Once the potatoes are done, let them cool for a few minutes. Then, slice off the top third of each potato and scoop out the inside flesh, leaving about 1/4 inch of potato flesh around the edges.
- Mix the scooped-out potato flesh with the remaining tablespoon of butter and the milk until smooth and creamy. Season with salt and pepper to taste.
- Fill each potato skin with the salmon mixture, and then top it off with the creamy potato mixture.
- Place the stuffed potatoes back on the baking sheet and bake them for another 10-15 minutes, or until the tops are golden brown.
Serving Suggestions
Serve the stuffed potatoes hot, garnished with fresh herbs like chives or parsley. These potatoes are great as a main course or as a side dish to a hearty salad or roasted vegetables.
