Potatoes in Oyster Matelote Recipe

Ingredients:

  • 2 lbs potatoes
  • 1 pint oysters, shucked
  • 1/2 lb bacon, chopped
  • 2 cups chicken broth
  • 1/2 cup flour
  • 1/2 cup butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • salt to taste
  • chopped parsley for garnish

Instructions:

  1. Peel and slice potatoes into 1/4 inch rounds. Place them in salted water.
  2. Melt butter in a large skillet and fry bacon until crisp. Remove bacon with a slotted spoon and set aside.
  3. Add onions and garlic to the skillet and cook for 3-4 minutes until translucent.
  4. Add flour and cook for 2 minutes, stirring constantly.
  5. Add chicken broth, bay leaf, thyme, black pepper and salt. Stir well and bring to a boil.
  6. Add oysters and cook for 2-3 minutes until the edges curl. Remove oysters with a slotted spoon and set aside.
  7. Layer half of the sliced potatoes in a greased baking dish. Pour half of the oyster sauce over them. Repeat with remaining potatoes and sauce.
  8. Top with the reserved bacon and bake uncovered at 375°F for 30-40 minutes, or until potatoes are tender.
  9. Sprinkle with chopped parsley before serving.
