Ingredients

  • 4 large egg whites
  • 1 cup superfine sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • Pink food coloring, a few drops

Instructions

  1. Preheat the oven to 200°F (93°C). Line a large baking sheet with parchment paper and set aside.
  2. Separate the egg whites from the yolks and transfer the whites to a large mixing bowl.
  3. Using an electric mixer on medium speed, beat the egg whites until they become foamy.
  4. Add the cream of tartar and continue to beat the egg whites on medium speed until soft peaks form.
  5. Gradually add the superfine sugar, one tablespoon at a time, while continuing to beat the egg whites on medium speed until the sugar dissolves and the mixture becomes glossy and stiff peaks form.
  6. Stir in the vanilla extract and a few drops of pink food coloring until well combined. Use more or less food coloring depending on how pink you want your meringues to be.
  7. Scoop the meringue mixture into a piping bag fitted with a star tip. Pipe the meringue onto the prepared baking sheet, making small swirls or rosettes.
  8. Bake the meringues for about 2 hours, or until they are crisp on the outside and chewy on the inside. Turn off the oven and let the meringues cool inside the oven for about an hour.
  9. Once cooled, store the meringues in an airtight container at room temperature for up to a week.
