Ingredients
- 4 large egg whites
- 1 cup superfine sugar
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
- Pink food coloring, a few drops
Instructions
- Preheat the oven to 200°F (93°C). Line a large baking sheet with parchment paper and set aside.
- Separate the egg whites from the yolks and transfer the whites to a large mixing bowl.
- Using an electric mixer on medium speed, beat the egg whites until they become foamy.
- Add the cream of tartar and continue to beat the egg whites on medium speed until soft peaks form.
- Gradually add the superfine sugar, one tablespoon at a time, while continuing to beat the egg whites on medium speed until the sugar dissolves and the mixture becomes glossy and stiff peaks form.
- Stir in the vanilla extract and a few drops of pink food coloring until well combined. Use more or less food coloring depending on how pink you want your meringues to be.
- Scoop the meringue mixture into a piping bag fitted with a star tip. Pipe the meringue onto the prepared baking sheet, making small swirls or rosettes.
- Bake the meringues for about 2 hours, or until they are crisp on the outside and chewy on the inside. Turn off the oven and let the meringues cool inside the oven for about an hour.
- Once cooled, store the meringues in an airtight container at room temperature for up to a week.
