Pressed Vegetables
Ingredients:
- Assorted Vegetables (such as zucchini, eggplant, red bell peppers, and carrots), sliced into thin strips
- 1/4 cup Olive oil
- 1 tbsp Balsamic vinegar
- 1 tsp Honey
- 1 Clove garlic, minced
- Salt and pepper to taste
Instructions:
- Preheat the oven to 200°F/100°C.
- Arrange the sliced vegetables in a single layer on a baking sheet and drizzle with olive oil.
- Bake the vegetables for 2-3 hours, until they are soft and tender but still hold their shape.
- Remove the vegetables from the oven and allow them to cool.
- Once the vegetables are cool, tightly press them together in a small baking dish or loaf pan.
- Cover the dish with plastic wrap and place a weight on top (such as a can or a heavy object) to compress the vegetables.
- Refrigerate the pressed vegetables for at least 2 hours, or overnight.
- Meanwhile, make the black olive vinaigrette by whisking together the balsamic vinegar, honey, minced garlic, salt, and pepper. Slowly drizzle in the olive oil while continuing to whisk, until the vinaigrette emulsifies.
- To serve, remove the pressed vegetables from the dish and slice into desired portions. Drizzle with the black olive vinaigrette and garnish with additional fresh herbs or olives, if desired.
Verdict:
Pressed vegetables are a delicious and elegant way to showcase the natural flavors and textures of fresh, seasonal produce. The slow baking process intensifies the sweetness of the vegetables while retaining their crispiness, resulting in a dish that is both visually stunning and bursting with flavor. The black olive vinaigrette adds a tangy, salty counterpoint to the rich, mellow flavors of the vegetables, making this dish an ideal appetizer or side dish for any occasion.
Serving Suggestions:
Pressed vegetables pair well with crusty bread, artisanal cheeses, and other Mediterranean-inspired dishes such as grilled lamb chops or roasted chicken. Serve them alongside a crisp white wine or a refreshing summer cocktail for a light and refreshing meal that celebrates the simplicity and beauty of fresh ingredients.
