Pretzel – Treat Recipe

Ingredients

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 2 1/4 teaspoons active dry yeast
  • 4 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Kosher salt

Instructions

  1. In a mixing bowl, combine warm water, sugar, kosher salt, and yeast. Mix to combine and allow the mixture to sit for 5 minutes until it is frothy.
  2. Add the flour and melted butter to the bowl, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the sides of the bowl, approximately 4 to 5 minutes.
  3. Remove the dough from the mixing bowl and place it in a well-oiled bowl. Cover the bowl with a clean towel and allow it to rest for approximately 50 minutes in a warm, draft-free area.
  4. Preheat the oven to 450°F. Line 2 half-sheet pans with parchment paper and place a wire rack on top.
  5. Bring 10 cups of water to a boil in a large pot.
  6. Place the dough onto a lightly oiled work surface and divide it into 8 equal pieces. Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other, and press onto the bottom of the U to form the shape of a pretzel. Place onto the parchment-lined half-sheet pan.
  7. One at a time, place the pretzels into the boiling water for 30 seconds. Remove them from the water using a large flat spatula. Return the pretzels to the pans, brush the top of each pretzel with the beaten egg yolk mixture and sprinkle with kosher salt.
  8. Bake until the pretzels are golden brown, approximately 12 to 14 minutes. Transfer to a cooling rack for at least 5 minutes before serving.
