Profiteroles
Ingredients:
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 tsp salt
- 1 cup all-purpose flour
- 4 large eggs
- 3 cups whipped cream
- 1 cup chocolate chips
Instructions:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium-high heat.
- Reduce heat to medium-low and add flour. Stir vigorously with a wooden spoon until the dough forms into a ball and pulls away from the sides of the pan. Remove from heat.
- Add eggs, one at a time, beating well after each addition. Beat until the batter is smooth and shiny.
- Using a piping bag or two spoons, pipe or drop the batter onto the prepared baking sheet. Space the pastry puffs about 2 inches apart.
- Bake for 20-25 minutes until golden brown. Turn off the oven, open the oven door slightly, and let the pastry puffs cool in the oven for 10-15 minutes.
- Remove from oven and cool completely.
- Cut the tops off of the pastry puffs and fill with whipped cream using a piping bag. Replace the tops and drizzle with melted chocolate chips.
- Chill in the refrigerator for 30 minutes to 1 hour before serving.
