Profiteroles

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 3 cups whipped cream
  • 1 cup chocolate chips

Instructions:

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium-high heat.
  3. Reduce heat to medium-low and add flour. Stir vigorously with a wooden spoon until the dough forms into a ball and pulls away from the sides of the pan. Remove from heat.
  4. Add eggs, one at a time, beating well after each addition. Beat until the batter is smooth and shiny.
  5. Using a piping bag or two spoons, pipe or drop the batter onto the prepared baking sheet. Space the pastry puffs about 2 inches apart.
  6. Bake for 20-25 minutes until golden brown. Turn off the oven, open the oven door slightly, and let the pastry puffs cool in the oven for 10-15 minutes.
  7. Remove from oven and cool completely.
  8. Cut the tops off of the pastry puffs and fill with whipped cream using a piping bag. Replace the tops and drizzle with melted chocolate chips.
  9. Chill in the refrigerator for 30 minutes to 1 hour before serving.
