  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon fresh thyme leaves
  • 1/2 cup grated Parmesan cheese
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten

Directions

  1. Preheat oven to 400°F.
  2. In a large skillet, melt the butter over medium-high heat. Add the mushrooms and sauté until tender and lightly browned, about 8 minutes.
  3. Sprinkle the flour over the mushrooms and stir to combine. Cook for 1 minute.
  4. Gradually add the cream and stir until the mixture comes to a simmer. Cook until the sauce has thickened, about 5 minutes.
  5. Season with salt, pepper, and thyme. Remove from heat and stir in the Parmesan cheese.
  6. On a lightly floured surface, roll the puff pastry into a 14-inch square. Cut into four 7-inch squares.
  7. Divide the mushroom mixture among the squares, spooning it into the center of each square. Brush the edges of the pastry squares with the beaten egg.
  8. Bring the opposite corners of each pastry square together and press to seal. Place the pastries on a parchment-lined baking sheet.
  9. Brush the tops of the pastries with the beaten egg. Bake until the pastry is golden brown and puffed, about 20-25 minutes.
  10. Serve warm.
