Pumpkin Cordon Bleu Recipe

Ingredients:

  • 4 thin slices of cooked pumpkin (about 1 cm thick)
  • 4 slices of cooked ham or prosciutto
  • 4 slices of Swiss or Gruyere cheese
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 1/4 cup flour
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Toothpicks or kitchen twine

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Lay out the slices of cooked pumpkin and season them with salt and pepper.
  3. Layer each slice of pumpkin with a slice of ham or prosciutto and a slice of Swiss or Gruyere cheese.
  4. Roll up the pumpkin slices, securing the roll with toothpicks or kitchen twine.
  5. Place the flour into one shallow dish, the beaten egg into another shallow dish, and breadcrumbs into a third.
  6. Cover each pumpkin roll in the flour, shaking off any excess, then dip it into the egg and finally, coat it with breadcrumbs.
  7. In a large skillet, melt the butter over medium-high heat. Fry each pumpkin roll for about 2 minutes on each side or until golden brown.
