Pumpkin Gnocchi with Lamb’s Lettuce Pesto and Parsley

Ingredients:

  • 2 cups pumpkin puree
  • 2 cups all-purpose flour
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 cup lamb’s lettuce
  • 1/4 cup parsley
  • 1/4 cup grated parmesan cheese
  • 1 clove garlic
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix together the pumpkin puree, flour, egg, salt, and nutmeg until a sticky dough forms.
