Pumpkin, Roquefort and Fig Tart Recipe
Ingredients
- 1 sheet of puff pastry
- 2 cups of pumpkin, peeled and cubed
- 1/2 cup of Roquefort cheese, crumbled
- 10-12 fresh figs, halved
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 200°C/400°F. Roll out the puff pastry sheet and place it onto a lined baking tray.
- In a bowl, mix pumpkin cubes, olive oil, honey, salt and pepper. Stir until the pumpkin cubes are well coated with the mixture.
- Spoon the pumpkin mixture onto the puff pastry, leaving a gap of approximately 1 inch from the edges. Add Roquefort cheese crumbles on top of the pumpkin mixture. Arrange the figs on top of the cheese and pumpkin layer.
- Bake the tart in the oven for 25-30 minutes, or until the puff pastry is cooked and golden-brown. Distribute the additional Roquefort cheese evenly across the tart and bake for another 5 minutes until the cheese has melted.
