Quick and Easy Potato Bombs

Ingredients:

  • 5-6 medium sized potatoes
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • 1/4 cup bacon bits
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F.
  2. Wash and peel the potatoes. Cut them into halves and scoop out the center.
  3. In a separate pan, melt the butter and add minced garlic, salt, and pepper to taste.
  4. Take a bowl and mix together the scooped-out potato, garlic butter, cheddar cheese, green onions, and bacon bits.
  5. Add salt and pepper to taste.
  6. Stuff this mixture back into the hollowed-out potato halves.
  7. Line a baking tray with parchment paper and place the stuffed potatoes on it.
  8. Bake in the oven for 20-25 minutes until the potatoes are cooked through and crispy on the outside.
  9. Serve hot with a dollop of sour cream and chopped chives as a garnish.
