Quince Paste Recipe
Ingredients:
- 2 pounds of ripe quinces
- 4 cups of granulated sugar
- 4 cups of water
- 1 cinnamon stick
- 1 lemon, juiced
Directions:
- Peel and remove core from quinces. Cut into small pieces and place them in a large pot.
- Add sugar and water to the pot, as well as a cinnamon stick. Bring to a boil on high heat and stir until all of the sugar dissolves.
- Reduce heat to a simmer and let the quinces cook for 1 hour, or until they are tender. Stir occasionally.
- Remove cinnamon stick and puree the mixture in a food processor or blender.
- Place the puree back in the pot and bring it to a boil on high heat.
- Reduce heat to low and let the mixture simmer, while stirring often, for 1 hour or until it turns into a thick paste consistency.
- Add lemon juice to the paste and stir.
- Transfer the paste to a square baking dish lined with parchment paper and evenly spread it out to approx. 1/2 inch thickness.
- Allow the paste to cool and set overnight at room temperature.
- Cut into small squares or rectangles and serve.
