Quince Paste Recipe
Ingredients:
- 4 large quinces, peeled and cored
- 1 cup water
- 2 cups granulated sugar
- 1 teaspoon lemon juice
Instructions:
- Cut the peeled and cored quinces into small pieces.
- In a large pot, bring the quinces and water to a boil, then reduce the heat to low and simmer for about an hour or until the quinces are very soft.
- Use a food processor or blender to puree the quince mixture until smooth.
- Return the puree to the pot and add the sugar and lemon juice.
- Stir the mixture constantly over low heat until the sugar has completely dissolved.
- Continue to cook the mixture, stirring occasionally for about an hour or until it has thickened and has a deep, reddish-pink color.
- Pour the mixture into a parchment paper-lined baking dish and smooth out the top with a spatula.
- Bake in the oven for about 2-3 hours at a low, slow heat of 200°F (93°C) until the paste has set.
- Remove from the oven, let cool and then cut into small squares or diamonds.
- Store in an airtight container in the fridge for up to 3 months.
