Quinoa Croquettes Recipe
Ingredients
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1/2 cup of breadcrumbs
- 2 eggs, beaten
- 1/2 cup of grated cheese
- 1/2 cup of chopped onions
- 2 cloves of garlic, minced
- 1/4 cup of chopped parsley
- Salt and pepper to taste

Instructions

- Heat about 1/4 inch of oil in a large skillet over medium-high heat.
- Add the croquettes to the skillet and fry until golden brown, flipping occasionally to cook both sides.
- Remove from heat and place it on a paper towel-lined plate to get rid of excess oil.
- Serve immediately.
