Quinoa salad with green vegetables Recipe
Ingredients
- 1 cup quinoa
- 2 cups water
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 cup chopped cucumber
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped broccoli
- 1/2 cup chopped kale
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Juice from one lemon
- Salt and black pepper to taste
Instructions
- Rinse quinoa in a fine mesh strainer and then combine with water in a medium saucepan. Bring to a boil, reduce heat, cover and simmer for 15-20 minutes or until water has been absorbed. Remove from heat and let cool.
- In a large bowl, combine chopped cucumbers, green bell pepper, broccoli, kale, parsley and mint.
- In a small skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Remove from heat and blend with lemon juice to make dressing.
- Add cooked quinoa and dressing to the bowl of vegetables.
- Toss everything together until it’s evenly coated with dressing.
- Add salt and black pepper to taste.
- Serve cold and enjoy!
