Quinoa salad with green vegetables Recipe

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped broccoli
  • 1/2 cup chopped kale
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Juice from one lemon
  • Salt and black pepper to taste

Instructions

  1. Rinse quinoa in a fine mesh strainer and then combine with water in a medium saucepan. Bring to a boil, reduce heat, cover and simmer for 15-20 minutes or until water has been absorbed. Remove from heat and let cool.
  2. In a large bowl, combine chopped cucumbers, green bell pepper, broccoli, kale, parsley and mint.
  3. In a small skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Remove from heat and blend with lemon juice to make dressing.
  4. Add cooked quinoa and dressing to the bowl of vegetables.
  5. Toss everything together until it’s evenly coated with dressing.
  6. Add salt and black pepper to taste.
  7. Serve cold and enjoy!
