Quinoa Salad with Tofu, Avocado and Radish

Ingredients:

  • 1 cup quinoa
  • 16 oz firm tofu, drained and pressed
  • 1 avocado, diced
  • 4-5 radishes, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lime juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions:

  1. Cook quinoa according to package instructions.
  2. Cut tofu into small cubes and season with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium high heat and add tofu. Cook until golden brown, about 10 minutes. Remove from heat and set aside.
  3. In a small bowl, whisk together 1 tbsp olive oil, lime juice, garlic, and a pinch of salt and pepper. In a large bowl, combine cooked quinoa, tofu, avocado, radishes, cilantro, and dressing. Toss until everything is well combined. Serve immediately.
