Quinoa Salad with Tofu, Avocado and Radish
Ingredients:
- 1 cup quinoa
- 16 oz firm tofu, drained and pressed
- 1 avocado, diced
- 4-5 radishes, thinly sliced
- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil
- 2 tbsp freshly squeezed lime juice
- 1 garlic clove, minced
- Salt and pepper, to taste
Instructions:
- Cook quinoa according to package instructions.
- Cut tofu into small cubes and season with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium high heat and add tofu. Cook until golden brown, about 10 minutes. Remove from heat and set aside.
- In a small bowl, whisk together 1 tbsp olive oil, lime juice, garlic, and a pinch of salt and pepper. In a large bowl, combine cooked quinoa, tofu, avocado, radishes, cilantro, and dressing. Toss until everything is well combined. Serve immediately.
