Quinoa with Asparagus and Feta

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup crumbled feta cheese
  • Freshly ground black pepper

Instructions:

  1. In a medium saucepan, bring the quinoa, water, and salt to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is tender.
  2. While the quinoa cooks, heat the olive oil in a large skillet over medium heat. Add the asparagus and cook for 5-7 minutes or until tender-crisp.
  3. Stir in the garlic powder, dried oregano, dried thyme, and black pepper. Cook for 1-2 minutes or until fragrant.
  4. Add the cooked quinoa to the skillet and toss to combine with the asparagus and herbs. Crumble the feta cheese over the top and stir gently to combine.
  5. Remove from heat and serve hot or at room temperature.
