Rabanadas Recipe
Ingredients:
- 1 baguette or similar bread (sliced)
- 4 eggs
- 2 cups of milk
- 1 cup sugar
- 1 cinnamon stick
- 1 lemon peel
- 1 cup vegetable oil
Instructions:
- In a medium saucepan, combine the milk, cinnamon stick and lemon peel. Heat over medium heat until it starts to boil. Remove from heat and discard the cinnamon stick and lemon peel.
- In a shallow bowl, whisk the eggs.
- Dip each slice of bread in the milk mixture and then in the eggs mixture.
- Heat the vegetable oil in a frying pan over medium-high heat. Fry each slice of bread until golden brown on both sides.
- Remove from the pan and place on a paper towel to absorb the excess oil.
- In a small bowl, mix the sugar and cinnamon.
- Coat each slice of bread with the sugar mixture.
- Serve warm.
