Rabanadas (Christmas French Toast)


Rabanadas Recipe

Ingredients:

  • 1 baguette or similar bread (sliced)
  • 4 eggs
  • 2 cups of milk
  • 1 cup sugar
  • 1 cinnamon stick
  • 1 lemon peel
  • 1 cup vegetable oil

Instructions:

  1. In a medium saucepan, combine the milk, cinnamon stick and lemon peel. Heat over medium heat until it starts to boil. Remove from heat and discard the cinnamon stick and lemon peel.
  2. In a shallow bowl, whisk the eggs.
  3. Dip each slice of bread in the milk mixture and then in the eggs mixture.
  4. Heat the vegetable oil in a frying pan over medium-high heat. Fry each slice of bread until golden brown on both sides.
  5. Remove from the pan and place on a paper towel to absorb the excess oil.
  6. In a small bowl, mix the sugar and cinnamon.
  7. Coat each slice of bread with the sugar mixture.
  8. Serve warm.
