Radish and Ricotta Soup Recipe
Ingredients:
- 1 pound radishes, trimmed and chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups chicken or vegetable broth
- 1 cup ricotta cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (optional garnish)
Directions:
- In a large pot, heat olive oil over medium heat. Add onion and garlic and cook until onion is translucent, about 5 minutes.
