Radish and Ricotta Soup Recipe

Ingredients:

  • 1 pound radishes, trimmed and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups chicken or vegetable broth
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional garnish)

Directions:

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic and cook until onion is translucent, about 5 minutes.
  2. Add radishes and cook for another 5 minutes.
  3. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce heat to a simmer, cover, and cook for 15-20 minutes or until the radishes are tender.
  4. Remove from heat and puree the mixture using an immersion blender or in batches in a blender or food processor until smooth.
  5. Return the pureed mixture to the pot and stir in the ricotta cheese until it is fully incorporated and smooth.
  6. Season with salt and pepper to taste.
  7. Optional: garnish with fresh chopped parsley before serving.
