Ingredients:

  • 1 cup raisins
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk

Instructions:

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9-inch cake pan.
  2. In a medium bowl, combine the raisins with enough hot water to cover them. Allow them to soak for at least 10 minutes, then drain and set aside.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs and vanilla extract and continue to beat until well combined.
  5. Add the dry ingredients and the buttermilk to the butter mixture in alternating batches, beginning and ending with the dry ingredients. Mix just until everything is evenly combined.
  6. Fold in the raisins, then pour the batter into the prepared cake pan.
  7. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center of the cake comes out clean.
  8. Cool the cake in the pan for 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack.
