Ingredients

  • 2 cups of mixed red berries (e.g., strawberries, raspberries, cherries)
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons unflavored gelatin
  • 1 cup heavy cream
  • 1/2 cup plain Greek yogurt

Directions

  1. Wash the berries thoroughly and remove the stems. Put them in a blender and puree until smooth
  2. In a small saucepan, mix together the berry puree, sugar, and lemon juice, and bring it to a simmer over medium heat. Cook for 10 minutes while stirring occasionally.
  3. Soften the gelatin by sprinkling it over ΒΌ cup of cold water. Let it stand for 5 minutes
  4. Microwave the gelatin for 10-15 seconds, or until completely dissolved. Let it cool down for a minute.
  5. Add the gelatin mixture to the berry mixture and whisk until well combined. Let it cool for 5 minutes.
  6. In a separate bowl, whip the heavy cream until soft peaks form
  7. Fold the whipped cream and Greek yogurt into the cooled berry mixture until fully combined
  8. Pour the mixture into ramekins or glasses, and refrigerate for at least 1 hour before serving
