Rhubarb Coulis Recipe

Ingredients

  • 500g rhubarb, trimmed and cut into chunks
  • 100g caster sugar
  • 100ml water

Instructions

  1. Put the rhubarb, sugar and water in a large pan.
  2. Cook over a medium heat for 10-15 minutes until the rhubarb is soft and mushy.
  3. Use a stick blender or transfer the mixture to a blender and blend until smooth.
  4. Pass the mixture through a sieve to remove any leftover fibres.
  5. Cool slightly before serving.
