Rhubarb Coulis Recipe
Ingredients
- 500g rhubarb, trimmed and cut into chunks
- 100g caster sugar
- 100ml water
Instructions
- Put the rhubarb, sugar and water in a large pan.
- Cook over a medium heat for 10-15 minutes until the rhubarb is soft and mushy.
- Use a stick blender or transfer the mixture to a blender and blend until smooth.
- Pass the mixture through a sieve to remove any leftover fibres.
