Ricotta and Saffron Ravioli Recipe
Ingredients:
- 1 cup ricotta cheese
- 2 egg yolks
- 1/4 cup grated parmesan cheese
- 1/4 tsp ground black pepper
- 1/2 tsp salt
- 1 pinch of saffron
- 1 cup all-purpose flour
- 1/4 cup semolina flour
- 2 eggs
- 1 tbsp olive oil
- 1/4 cup water
Instructions:
- In a mixing bowl, combine the ricotta cheese, egg yolks, parmesan cheese, black pepper, salt, and saffron. Mix well until creamy.
- In another bowl, mix the all-purpose flour and semolina flour together. Add the eggs, olive oil, and water. Mix until a dough forms.
- Divide the dough into two or three pieces and roll them out as thinly as possible (to about 1/8 inch thickness).
- Using a ravioli cutter or a knife, cut the dough into 2-inch squares or circles.
- Place a small dollop (about 1/2 tsp) of the ricotta mixture onto the center of each square or circle.
- Fold the dough over to cover the filling, pressing down gently around the edges to seal.
- Bring a pot of salted water to a boil. Add the ravioli and cook for about 2-3 minutes or until they float to the surface.
- Remove the ravioli with a slotted spoon and place on a serving plate.
