Ricotta and Saffron Ravioli Recipe

Ingredients:

  • 1 cup ricotta cheese
  • 2 egg yolks
  • 1/4 cup grated parmesan cheese
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 1 pinch of saffron
  • 1 cup all-purpose flour
  • 1/4 cup semolina flour
  • 2 eggs
  • 1 tbsp olive oil
  • 1/4 cup water

Instructions:

  1. In a mixing bowl, combine the ricotta cheese, egg yolks, parmesan cheese, black pepper, salt, and saffron. Mix well until creamy.
  2. In another bowl, mix the all-purpose flour and semolina flour together. Add the eggs, olive oil, and water. Mix until a dough forms.
  3. Divide the dough into two or three pieces and roll them out as thinly as possible (to about 1/8 inch thickness).
  4. Using a ravioli cutter or a knife, cut the dough into 2-inch squares or circles.
  5. Place a small dollop (about 1/2 tsp) of the ricotta mixture onto the center of each square or circle.
  6. Fold the dough over to cover the filling, pressing down gently around the edges to seal.
  7. Bring a pot of salted water to a boil. Add the ravioli and cook for about 2-3 minutes or until they float to the surface.
  8. Remove the ravioli with a slotted spoon and place on a serving plate.
