  • 1 cup ricotta cheese
  • 1 cup spinach, finely chopped
  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup Parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. In a mixing bowl, combine the ricotta cheese, spinach, egg, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  2. Mix all of the ingredients together until they are well combined and form a sticky mixture.
  3. Form the mixture into small balls, about the size of a ping pong ball.
  4. Heat a frying pan over medium heat, and add a few tablespoons of olive oil to the pan.
  5. Add the ricotta and spinach balls to the pan, and fry them on all sides until they are golden brown and crispy – this should take about 5-6 minutes in total.
  6. Remove the bites from the pan and place them on a paper towel-lined plate to cool and drain excess oil.
  7. Serve the ricotta and spinach bites hot or cold, with your choice of dipping sauce.
