Ricotta Tart with Cherries Recipe

Ingredients:

  • 1 pre-made pie crust
  • 1 cup ricotta cheese
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup fresh cherries, halved and pitted
  • Confectioners’ sugar, for dusting

Directions:

  1. Preheat the oven to 350°F.
  2. Roll out the pie crust on a floured surface and fit it into a 9-inch tart pan. Prick the bottom of the crust with a fork and set aside.
  3. In a mixing bowl, combine the ricotta cheese, granulated sugar, eggs, vanilla extract, and salt, and mix until well blended.
  4. Pour the mixture into the prepared pie crust.
  5. Place the cherry halves over the top of the ricotta mixture.
  6. Bake in the preheated oven for 35 to 40 minutes, or until golden brown and set.
  7. Let cool to room temperature before removing from the tart pan.
  8. Dust with confectioners’ sugar before serving.

Serving Suggestions:

Serve the ricotta tart with cherries on its own, or topped with whipped cream or vanilla ice cream for a delicious dessert. It can also be paired with a cup of coffee or tea for a sweet treat. Enjoy!
