Roasted Pears with Coffee Sabayon Recipe
Ingredients:
- 4 ripe pears, peeled and halved lengthwise
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 tablespoons honey
- 1 cup heavy cream
- 4 egg yolks
- 1/4 cup sugar
- 1/4 cup strong brewed coffee, cooled
- 1 tablespoon bourbon
Instructions:
- Preheat oven to 400°F (200°C).
- In a bowl, combine the melted butter, 1/4 cup granulated sugar and honey. Toss the pear halves in the mixture to coat them evenly.
- Place the pear halves cut side down on a baking sheet lined with parchment paper.
- Bake for about 20-25 minutes, or until they are golden brown and the edges are caramelized.
- For the sabayon, in a mixing bowl, whisk the egg yolks and sugar until they are light and frothy.
- Place the mixing bowl over a pot of simmering water. Pour in the cooled brewed coffee while whisking constantly.
- Continue to whisk and cook for about 5-7 minutes, or until the mixture has thickened and doubled in volume.
- Remove the bowl from the heat and whisk in the bourbon.
- In another mixing bowl, whip the cream until it forms soft peaks.
- Gently fold in the sabayon mixture until well combined.
- To serve, place two roasted pear halves on a plate and spoon the coffee sabayon over the pears.
