Roasted Pears with Coffee Sabayon Recipe

Ingredients:

  • 4 ripe pears, peeled and halved lengthwise
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey
  • 1 cup heavy cream
  • 4 egg yolks
  • 1/4 cup sugar
  • 1/4 cup strong brewed coffee, cooled
  • 1 tablespoon bourbon

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine the melted butter, 1/4 cup granulated sugar and honey. Toss the pear halves in the mixture to coat them evenly.
  3. Place the pear halves cut side down on a baking sheet lined with parchment paper.
  4. Bake for about 20-25 minutes, or until they are golden brown and the edges are caramelized.
  5. For the sabayon, in a mixing bowl, whisk the egg yolks and sugar until they are light and frothy.
  6. Place the mixing bowl over a pot of simmering water. Pour in the cooled brewed coffee while whisking constantly.
  7. Continue to whisk and cook for about 5-7 minutes, or until the mixture has thickened and doubled in volume.
  8. Remove the bowl from the heat and whisk in the bourbon.
  9. In another mixing bowl, whip the cream until it forms soft peaks.
  10. Gently fold in the sabayon mixture until well combined.
  11. To serve, place two roasted pear halves on a plate and spoon the coffee sabayon over the pears.
