Roasted Pineapple with Vanilla Butter Recipe

Ingredients

  • 1 ripe pineapple
  • 4 tbsp unsalted butter
  • 1 vanilla bean
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 400°F.
  2. Cut off the top and bottom of the pineapple and peel it. Cut the pineapple into 8 pieces lengthwise and remove the core.
  3. Melt the butter in a small saucepan over low heat. Scrape the vanilla bean and add the seeds and pod to the butter. Remove from the heat and let it sit for 5 minutes.
  4. Discard the vanilla pod and add brown sugar, cinnamon, and salt to the butter. Stir well.
  5. Arrange the pineapple pieces on a baking sheet and brush the vanilla butter mixture over the top of each piece.
  6. Roast the pineapple for 20-25 minutes or until tender and golden brown.
  7. Serve hot and enjoy!
