Roasted Pineapple with Vanilla Butter Recipe
Ingredients
- 1 ripe pineapple
- 4 tbsp unsalted butter
- 1 vanilla bean
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 400°F.
- Cut off the top and bottom of the pineapple and peel it. Cut the pineapple into 8 pieces lengthwise and remove the core.
- Melt the butter in a small saucepan over low heat. Scrape the vanilla bean and add the seeds and pod to the butter. Remove from the heat and let it sit for 5 minutes.
- Discard the vanilla pod and add brown sugar, cinnamon, and salt to the butter. Stir well.
- Arrange the pineapple pieces on a baking sheet and brush the vanilla butter mixture over the top of each piece.
- Roast the pineapple for 20-25 minutes or until tender and golden brown.
