Rolled Cake Lollipops Recipe

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 3 eggs, separated
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar

Instructions:

  1. Preheat oven to 350°F. Grease a 10×15 inch jelly roll pan and line with parchment paper.
  2. In a medium bowl, sift together the flour, powdered sugar, baking powder, and salt.
  3. In a large bowl, beat the egg yolks until light in color. Stir in vanilla extract and melted butter.
  4. Add the flour mixture to the egg yolk mixture and stir until just combined.
  5. In a separate bowl, beat the egg whites until soft peaks form.
  6. Add the granulated sugar to the egg whites, 1 tablespoon at a time, while continuing to beat until stiff peaks form.

  9. Bake the cake for 10-12 minutes, or until the top is golden brown and springs back to the touch.

  11. Carefully flip the cake out of the pan and onto a clean kitchen towel that has been dusted with powdered sugar to prevent sticking. Remove the parchment paper from the bottom of the cake.
  12. Roll the cake up with the towel, starting at one end and rolling tightly. Let the cake cool completely in the towel, seam-side down.
  13. Once the cake has cooled, use a sharp knife to trim off any uneven edges.
  14. Cut the cake into 1-inch wide strips.
  15. Insert a lollipop stick into the bottom of each strip, pushing the stick about halfway up the strip towards the top.
  16. Decorate the cake lollipops with sprinkles or other decorations as desired.
