Rolled Cake Lollipops Recipe
Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup powdered sugar
- 3 eggs, separated
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted and cooled
- Lollipop sticks
- Sprinkles, for decoration
Instructions:
- Preheat oven to 350°F. Grease a 10×15 inch jelly roll pan and line with parchment paper.
- In a medium bowl, sift together the flour, powdered sugar, baking powder, and salt.
- In a large bowl, beat the egg yolks until light in color. Stir in vanilla extract and melted butter.
- Add the flour mixture to the egg yolk mixture and stir until just combined.
- In a separate bowl, beat the egg whites until soft peaks form.
- Add the granulated sugar to the egg whites, 1 tablespoon at a time, while continuing to beat until stiff peaks form.
- Gently fold the egg whites into the cake batter until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake the cake for 10-12 minutes, or until the top is golden brown and springs back to the touch.
- Remove the cake from the oven and let it cool in the pan for 5 minutes.
- Carefully flip the cake out of the pan and onto a clean kitchen towel that has been dusted with powdered sugar to prevent sticking. Remove the parchment paper from the bottom of the cake.
- Roll the cake up with the towel, starting at one end and rolling tightly. Let the cake cool completely in the towel, seam-side down.
- Once the cake has cooled, use a sharp knife to trim off any uneven edges.
- Cut the cake into 1-inch wide strips.
- Insert a lollipop stick into the bottom of each strip, pushing the stick about halfway up the strip towards the top.
- Decorate the cake lollipops with sprinkles or other decorations as desired.
